Risk Attitudes in the Nutrition Domain





Many scholarly works associate risk attitudes with individual decision-making among various domains, e.g. financial investments, health behaviors, entrepreneurship, and insurance status. In this paper, I investigate the role of risk attitudes in food choice. Using a survey experiment, I construct a novel risk measure specific to nutrition. I find evidence that latent attitudes about risk can influence food choice. Moreover, this measure outperforms standard risk elicitation methods in predicting dietary behaviors.
